Easy One-Pot Meals for Busy College Students 

College life can be hectic, and finding time to cook can feel like a challenge. But with just a few simple ingredients and a single pot or pan, you can whip up delicious, budget-friendly meals with minimal cleanup. Here are some easy one-pot meal ideas that are perfect for college students. 

1. Cheesy Taco Skillet 

Ingredients: 

  • 1 lb ground beef or turkey 

  • 1 packet taco seasoning 

  • 1 cup salsa 

  • 1 cup water 

  • 1 cup instant rice 

  • 1 cup shredded cheese 
     

Instructions: 

  1. In a large skillet, cook the ground meat until fully browned. Drain any excess grease. 

  1. Stir in the taco seasoning, salsa, and water, and bring to a boil. 

  1. Add the rice, cover, and let simmer until the rice is tender (about 5 minutes). 

  1. Sprinkle cheese on top, cover, and let melt. Serve as is or with tortilla chips! 

2. One-Pot Pasta Primavera 

Ingredients: 

  • 8 oz pasta (penne or rotini work well) 

  • 2 cups vegetable broth 

  • 1 cup cherry tomatoes, halved 

  • 1 cup zucchini or bell peppers, sliced 

  • 1/2 cup heavy cream or milk 

  • Salt, pepper, and grated Parmesan (optional) 
     

Instructions: 

  1. In a large pot, add the pasta, broth, and vegetables. Bring to a boil. 

  1. Once boiling, reduce heat and simmer for about 10-12 minutes, until the pasta is cooked. 

  1. Stir in the cream or milk, season with salt and pepper, and cook for another minute. 

  1. Top with Parmesan if desired and enjoy! 

3. Chicken and Rice Stir-Fry 

Ingredients: 

  • 1 lb boneless chicken breast, cubed 

  • 1 bag frozen mixed vegetables 

  • 1 cup instant rice 

  • 2 cups chicken broth 

  • Soy sauce or teriyaki sauce to taste 
     

Instructions: 

  1. In a large pan, cook the chicken until no longer pink. 

  1. Add the mixed vegetables, rice, and chicken broth. Bring to a boil, then cover and reduce to a simmer. 

  1. Cook until the rice absorbs all the liquid (about 5-7 minutes). 

  1. Stir in soy or teriyaki sauce before serving. 

4. One-Pot Mac and Cheese 

Ingredients: 

  • 2 cups macaroni pasta 

  • 2 cups water 

  • 1 cup milk 

  • 1 1/2 cups shredded cheese (cheddar or a blend) 

  • Salt and pepper to taste 
     

Instructions: 

  1. In a pot, add the macaroni, water, and a pinch of salt. Bring to a boil, then reduce to a simmer, stirring frequently until pasta is cooked. 

  1. Once the pasta is tender, reduce the heat and stir in the milk and cheese until melted. 

  1. Season with salt and pepper to taste. Add a sprinkle of paprika or chili powder for extra flavor if desired. 

5. Easy Chili 

Ingredients: 

  • 1 lb ground beef or turkey 

  • 1 can black beans, drained 

  • 1 can diced tomatoes 

  • 1 packet chili seasoning 

  • 1 cup water or beef broth 
     

Instructions: 

  1. In a large pot, brown the ground meat, then drain excess grease. 

  1. Add the beans, tomatoes, chili seasoning, and water or broth. Stir to combine. 

  1. Let the chili simmer for 15-20 minutes, stirring occasionally. 

  1. Serve with shredded cheese, sour cream, or crackers if you like. 

6. Garlic Butter Shrimp and Rice 

Ingredients: 

  • 1 lb shrimp, peeled and deveined 

  • 2 cups instant rice 

  • 2 cups chicken or vegetable broth 

  • 2 cloves garlic, minced 

  • 1 tbsp butter 

  • Salt, pepper, and parsley (optional) 
     

Instructions: 

  1. Melt butter in a large pan, then add garlic and cook until fragrant. 

  1. Add shrimp and cook until pink on both sides (about 3-4 minutes). 

  1. Stir in rice and broth, cover, and cook until rice absorbs the liquid (about 5-7 minutes). 

  1. Garnish with parsley if desired and serve! 

7. One-Pan Veggie Fried Rice 

Ingredients: 

  • 1 cup cooked rice (leftover rice works well) 

  • 1/2 cup frozen peas and carrots 

  • 2 tbsp soy sauce 

  • 1 tbsp oil 

  • 1 egg (optional) 
     

Instructions: 

  1. Heat oil in a pan, then add the frozen vegetables and cook until soft. 

  1. Push the veggies to one side and crack the egg into the other side of the pan. Scramble it. 

  1. Add the rice and soy sauce, stirring everything together until well combined and heated through.
